In September, 2019 we were about to do our annual chile roast, prep and freeze drill. And I got lazy. I didn’t want to do the work and didn’t want to fill up our freezer for several months with frozen chile. So, I went online looking for freeze dried Hatch Chile.


I looked…and looked. Nothing. I called the New Mexico Dept of Agriculture. They said nobody was freeze drying Hatch Chile to their knowledge. I
called an author who had written several books about chiles. He had never heard of freeze drying Hatch chiles..


And so, I thought “somebody should be doing this”. And now, nearly 7 years and an international gold award recognition later, Sagrado Chile is
bringing freeze dried Hatch chile, tamales and other freeze dried foods to the world. Our products have been enjoyed from British Columbia Canada to Cape Town South Africa, Taiwan to Mexico and Italy to Columbia South America – 5 continents!
