Wilder Gardens LLC’s Original Recipe Tomato Sauce is Vicki Coffins recipe developed for her grandchildren after a bumper garden crop and their reluctance to eat fresh veggies. She entered and won 4 Blue Ribbons at the New Mexico State Fair before beginning commercial production in 2017. Vicki grew up in a farming family in Colorado. Fresh homemade food was everyday fare, and everyone worked in the garden, with crops and the livestock. Today, Wilder Gardens LLC is in Los Lunas, NM, and their sauces are made in a community kitchen. The Mariposa program is in the South Valley Economic Development Center. Their philosophy is to produce tasty food from fresh ingredients that contain no preservatives or artificial ingredients. They only make the sauce if they can source New Mexican grown tomatoes and support local farming community. They support recycling and pay a 25-cent return fee for their glass jars. The original recipe tomato sauce and the new Darla’s Spicy Tomato Sauce is marketed at growers' markets including Los Ranchos Growers, Albuquerque Downtown Growers, Albuquerque Rail Yards, and La Familia Growers. With this year's harvest they will expand into wholesale and retail distribution.
